Abstract:
     A process for purifying albumen features regulating alcohol concentration in purifying system to 8-13 Wt.% and pH value to 4.5-4.8, removing precipitate, increasing pH value of filtrate to 4.8-6.5, removing alcohol, and removing precipitate. The purity of albumen may be over 97%. It has high content of albumen monomer and less polymer and other impurities.
