Abstract:
    A method of producing diacetone sorbose by reacting alpha-sorbose with acetone in the presence of a ketal formation catalyst in acetone, which comprises: carrying out the reaction while continuously removing water generated in the reaction together with acetone and continuously adding to the reaction mixture dehydrated acetone of which water content is not more than about 100 ppm.
