| A novel saccharide which is free from carbon-carbon double bond and carbonyl, is represented by the molecular formula: C6H10O5, and exhibits in high-performance liquid chromatography a retention time of 11.0 /- 0.2 min as determined by using a column packed with a strongly acid ion-exchange resin made of a styrene -divinylbenzene copolymer having a degree of crosslinking of 8 % and bearing sodium-modified sulfonic acid groups as the ion-exchange group and water as the eluent at a column temperature of 40 DEG C at a flow rate of 1 ml/min with the retention times of reference materials (i.e., maltose and fructose) being 8.8 and 12.5 min respectively and in carbon nuclear magnetic resonance intramolecular-carbon chemical shifts of 70.54 /- 1, 95.37 /- 1, 75.09 /- 1, 68.86 /- 1, 77.99 /- 1, and 64.15 /- 1 ppm. This saccharide is useful as an antioxidant. | |||
