Abstract:
     Crystalline capsaicine is produced with rind of capsicum. The pungent component in capsicum rind is extracted with water solution of epoxide containing one or two oxygen atoms, and the extraction liquid is decompressing concentrated, pH value regulated with weak acid or led with CO2 to separate pungent component. The separated pungent component is purified via adsorbing column and re-crystallization to obtain pure crystalline capsaicine, which has a melting point of 64-65 deg.C and is measured to contain capsaicine 68-70% and dihydrocapsaicine 30-32%.
